Baking for the Fall on a Summer Day!

Hellooo! I hope everyone is enjoying their holiday week! I can't wait for tomorrow when Joey is off from work. We have a few business things to do and then hopefully we will be enjoying the sun, good food, and fireworks! Normally back home today, July 3rd, is typically the day when we would celebrate the 4th of July! We did a ring of fire around our lake and everyone comes to see fireworks, families are enjoying picnic dinners at a local park, and it is so nice to see everyone out and about!

So yesterday I took a break from working to bake one of my favorite Fall desserts! I know it's not Fall but I'm ready for the Fall season and what better way to get in the Fall mood :) I thought I would share this great recipe with you and hope that you enjoy it.

Pumpkin Pie Bars

Ingredients:
1 and 1/2 cups plus 1 tablespoon all-purpose flour, divided
1 cup finely chopped nuts (this is optional I usually leave them out)
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
2 teaspoons ground cinnamon, divided
3/4 cup (1 and 1/2 sticks) butter or margarine
1 (15-ounce) can pumpkin
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk
2 Eggs, beaten
1/2 teaspoon ground all spcie
1/4 teaspoon salt

Step 1: Preheat oven to 375 degrees. In medium bowl, combine 1 and 1/2 cups flour, nuts (if you are using), granulated sugar, brown sugar, and 1 teaspoon cinnamon. Add butter; mix until crumbly. Reserve 1 and 1/4 cups flour mixture. Pat remaining mixture on bottom of ungreased 13x9-inch baking pan.

Step 2: In large bowl, combine pumpkin, Eagle Brand, eggs, remaining 1 teaspoon cinnamon, allspice, and salt; mix well. Pour evenly over crust.

Step 3: Mix reserved flour mixture with remaining 1 tablespoon flour. Sprinke over pumpkin mixture. Bake 30 to 35 minutes or until set. Cool about 10 minutes. Serve warm. Store leftovers covered in refrigerator.

Makes about 2 dozen bars.
